I’m sure many of you have eaten this salad before. I had this kind of salad for the first time a few days ago at a korean-Italian fusion restaurant called Team Cook in Daejeon South Korea. I loved how simple and light it was so I decided to recreate it at home. Lettuce, cherry tomatoes, almond slices, dried cranberries (a.k.a. crasins), and ricotta chesse dressed with balsamic glaze. Sometimes, all you want is something simple, healthy and delicious to eat. I went grocery shopping today (first time in a long time!). This is a simple salad anybody can make, eat and enjoy. I bought spinach leaves, Athenos Reduced fat Feta cheese, peanut pecan crumbles, Ken’s Steakhouse Raspberry Vinaigrette and tomatoes. Honestly, cherry tomatoes are GREAT for this kind of salad but I already had Roma tomatoes at home.
You don’t have to buy the exact brand name ingredients I did. I actually had all those for the first time today and I wanted seconds and thirds (hence, the 2 separate salad photos!). The good news is, it’s so healthy for you that eating more is ok. I hope you enjoy eating this leafy delight like I did! 🙂
Ok! So we all have that one place we always go to and order the same thing every time. For me, that place is AZ BBQ Company! I always get the Crispy Chicken salad with a side of onion strings. I get the junior size. Trust me, it’s enough! The meal in the photo is the regular size and I shared it with a friend. I have had their BBQ chicken and pork and it’s good! This place has won national awards for a reason. I’m in love with their Sonoran Sweet Heat BBQ sauce. I put it on my salad. You’ll definitely have to try this place out if you’re in south Phoenix. When I go, I’m usually talking to Katie at the front. Well actually, there are two Katie’s but both are lovely, friendly ladies! It gets packed though because it’s good and it’s only open during lunch hours Monday-Friday.
Today I got something extra and tried their banana cream cupcake. They usually have cupcakes in a refrigerator at the cashier desk. A vanilla cinnamon cake with banana cream filling and banana frosting. I really liked it. 😀
Meatloaf & Cornbread dinner. This was my dinner for today. Homemade meatloaf & cornbread, Uncle Ben’s rice and a light salad. Filled me right up. I love cornbread and meatloaf together. It’s like the perfect combination to me. Dinner was very satisfying today. 🙂
