I’m always trying to find ways to maintain a low-carb diet. I found a recipe for cauliflower bread on this blog HERE! She made it sound like a wonderful alternative. I really love making sandwiches but I don’t need the carbs. This is gluten-free and low-carb.
I followed the recipe exactly as written with the exception of these 2 things: I used padano cheese instead of parmigiano-reggiano; I used almond powder instead of almond flour and coconut flour. With the substitutions I made, I love this!! I made a chicken sandwich and wanted to make another! So good! And for me, very addicting! The recipe said 3 cups of shredded cauliflower. This is BEFORE draining. The recipe also says you don’t need to drain the cauliflower but I did anyway because I used cauliflower that I froze prior. I made 5 slices but you can get 6 out of it (I wanted big buns!!).
I’m definitely making this again!! 😀
