As the Pillsbury Bake-off 2013 deadline nears, I’ve been experimenting and modifying my homemade shortbread recipe to make these cookie butter sandwiches with Trader Joe’s Cookie butter as the filling. I’m excited that I’m old enough and able to participate in the contest this year. I’m still working on perfecting this recipe so that many people will love to eat them. They are very rich in flavor and I wouldn’t eat these without milk, tea, hot chocolate, coffee or water. I am considering adding nuts to the cookies to add an extra crunch. I’ve got some support on my side from people who have already eaten them. These will be great! 😀
